Aging & Technique Ageing and Method
Ageing jukusei Aging

Holding meat at a controlled temperature, humidity and airflow. Proteins break down, savoury amino acids increase, and the meat grows tender. GURECO uses both dry- and wet-aged beef.

Dry Ageing dorai eijingu Dry Aging

Ageing uncovered in a chilled room with moving air. The surface dries, moisture leaves, and flavour concentrates. Periods run from 21 to 120 days or more.

Wet Ageing wetto eijingu Wet Aging

Ageing sealed in vacuum packaging. The meat keeps its moisture as it tenderises. It works over shorter periods and is used for much of the beef on the market.

Whole Cut katamari-niku Block Meat

Meat served as a large block rather than pre-cut — the style GURECO cares most about. Cooking it whole holds the juices in, giving a deeper flavour than sliced portions.

Sashi (Marbling) sashi Marbling

Fat running between the muscle fibres. The finer its distribution, the finer the marbling, also called shimofuri. Characteristic of wagyu, it gives a melting texture and a sweetness.

Sirloin sāroin Sirloin

Held to be the finest part of the loin: well marbled, tender and full of juice. Tradition has it that an English king knighted the cut, making it Sir Loin. GURECO serves sirloin from Kadosaki Ushi Farm's Kuroge cows that have calved.

Uchimomo (Top Round) uchimomo Inside Round / Top Round

Lean meat from the inside of the round. Low in fat with a concentrated lean flavour, favoured by those who prefer lean beef to marbling. Kumamoto Akaushi top round is a GURECO staple.

Shoulder Loin kata-rōsu Shoulder Loin / Chuck Roll

The cut between shoulder and back, well balanced between marbling and lean meat, with a deep flavour. Bigorre pork shoulder loin is a favourite on our à la carte menu.

Keisan-gyu (Cow That Has Calved) keisan-gyū Cull Cow

A female that has finished breeding. Compared with younger cattle, the balance between fat and lean runs deeper and the flavour is more complex. Kadosaki Ushi Farm's Kuroge keisan-gyu sirloin is an ingredient we hold especially dear.

Kuroge Wagyu kuroge wagyū Kuroge Wagyu

One of Japan's four native wagyu breeds. It marbles finely and accounts for most of the wagyu on the domestic market. GURECO uses Kuroge keisan-gyu from Kadosaki Ushi Farm in Iwate.

Kumamoto Akaushi kumamoto akaushi Kumamoto Akaushi

Red cattle (Japanese Brown) raised in Kumamoto. Leaner than Kuroge wagyu, with a concentrated savoury flavour. Served on our à la carte menu.

Bigorre Pork bigōru ton Bigorre Pork

A native black pig from Gascony in south-west France. Brought back from near extinction, it is prized for the sweetness of its fat and its distinctive aroma. We serve French Bigorre shoulder loin à la carte.

A farm based in Hanamaki, Iwate, specialising in Kuroge wagyu and cows that have calved, and known for its own approach to ageing. One of the suppliers we trust.

Gin-no-Kamo Duck gin no kamo Silver Duck

A high-grade duck from France with fine, quality fat and a concentrated savoury depth. We serve the breast (wing attached) à la carte.

Natural Wine shizenha wain Natural Wine / Vin Naturel

Wine made from grapes grown organically or biodynamically, without pesticides, with no or very little added sulphite, unfined and unfiltered. The maker's philosophy and the character of the land come through directly. GURECO serves 100% natural wine only.

Bio Wine bio wain Biodynamic Wine / Vin Bio

Wine from grapes grown biologically or biodynamically. Close in spirit to natural wine, but with the emphasis on certification at the farming stage.

No Added Sulphites aryūsan-en mutenka Sulphite-free

Making wine without the sulphite (SO₂) normally added to prevent oxidation. A defining feature of natural wine: the fruit speaks more clearly, but the wine is harder to keep.

Terroir terowāru Terroir

The whole of the environment in which vines grow — soil, climate, terrain, sunlight. It is why the same grape tastes so different from one place to another. Natural wine sets out to express it as fully as possible.

Orange Wine orenji wain Orange Wine / Skin-contact Wine

White grapes vinified like a red, fermented with their skins and seeds. The result is amber to orange in colour, with tannin and a complex flavour. Widely loved in the natural wine world.

Confit konfi Confit

Cooking slowly in fat at a low temperature (lard, olive oil and the like). A traditional French technique that leaves the meat tender and moist. We serve duck leg confit.

Roasting rōsuto Roast

Cooking slowly in an oven or over an open flame. Resting a whole cut after roasting lets the juices settle evenly through the meat.

Charcoal Grilling sumibiyaki Charcoal Grilling

Radiant heat from charcoal sears the surface quickly while the inside cooks slowly, leaving a distinctive smoky aroma. We grill our à la carte main dishes this way.

Doneness yakikagen Doneness

How far a steak is cooked — rare, medium rare, medium, well done. At GURECO the chef judges it against the type, cut and thickness of the meat.
